Instructions when buying

Raw unpasteurized sauerkraut is a LIVE-ACTIVE food! So when opening the jar, in some cases you may notice an overflow of liquid or release of fermentation gases (bubbles) or in several cases both. This fact is completely natural and in fact is an indication that the sauerkraut is active that it is still fermenting, still breathing. If enough liquids are lost, simply push the product below the liquid level.
